Panko-crusted Lobster Fritters with Balsamic Reduction

Setup a breading station by beating 1 egg and 1/4 cup of milk in a one bowl and about 1 cup of Panko bread crumbs seasoned with a tsb of Kosher salt in another. Dip 8 1in pieces of cooked lobster meat into egg mixture and then lightly bread with bread crumbs.

Fry lobster in 1 cup of canola oil heated to 375 degrees for only 1-2 min just to crisp up.

Serve warm with balsamic reduction sauce.
